The Ultimate 7 Days in Turkey: Istanbul & Cappadocia Itinerary

Turkey is an incredible country known for its history, landscapes, and cuisine. Its most popular and visited destinations include Istanbul and Cappadocia — two places where you’ll get a deep sense of history and witness some of the country’s most unique landscapes. We were blown away by its culture and diversity in landscapes.

Turkey is a country that welcomes all budgets. Whether you’re staying in hostels, budget hotels, or looking for a more luxurious experience, you can find it all here. Seven days in Turkey is ideal for visiting the main attractions and gives you just enough time to experience both cities.

When to Visit Turkey: Best Seasons for Istanbul & Cappadocia

Peak season is from June to August. Expect places to be more crowded and expensive during this time. We visited during shoulder season, at the beginning of September, and found it to be a bit less crowded, more affordable, and comfortable in temperature.

Bonus: If you’re traveling during peak season, make sure to book your excursions ahead of time!

Turkey Travel Basics: Things to Know Before Visiting Turkey

  • Visa Requirements: U.S. citizens currently do not require a visa to enter Turkey. Be sure to verify if you need a visa based on your nationality.
  • Currency: Turkish Lira. We recommend having some cash at hand as many local markets still prefer that method of payment.
  • SIM cards/Wi-Fi: eSIMS are the most convenient options for wifi, this is the one we use. Physical SIM cards are still an option, often more affordable and can be purchased at the airport or in town.
  • Religion and Cultural norms: Turkey is mostly Muslim, so dress modestly when visiting mosques (shoulders and knees covered). Women may need a scarf to cover their hair inside.

7-Day Turkey Itinerary

Hagia Sophia, Istanbul Turkey

Day 1: Arrival in Istanbul + Evening in Sultanahmet

Welcome to Istanbul! After checking into your hotel, we suggest heading straight out for a relaxing walk — Istanbul is incredibly walkable, and there’s no better way to start than getting familiar with the city’s rhythm. We stayed in Sultanahmet and loved how central it was. Most major landmarks like the Blue Mosque and Hagia Sophia are within walking distance of each other, making it easy to jump into sightseeing without feeling rushed.

Fun Fact: Cats rule the streets in Turkey—especially in Istanbul. Locals love and care for them, so don’t be surprised if a cat joins you at a café.

Day 2: Full Day Exploring Istanbul

Grand Bazaar, Istanbul Turkey

Now that you’re settled, it’s time to dive into the heart of Istanbul’s charm. Today is about shopping, culture, and iconic markets. From the bustling Grand Bazaar to the peaceful corners of the Basilica Cistern to the scenery and dinner show on a cruise — there’s always something unique to discover.

Note: Turkey also had some of the most colorful and eye-catching souvenir shops we’ve ever seen. From hand-painted ceramics to silver jewelry and mosaic lanterns, you’re bound to find something to bring home.

Day 3: Explore A Different Side Of Istanbul.

Today, hop on a ferry or taxi and explore a different side of the city — literally! Whether you choose to visit Kadiköy on the Asian side, explore colorful neighborhoods of Balat, or stroll through the spice market where you’ll get to experience a little more of Istanbul.

We loved discovering cozy cafés, colorful street art, and quiet viewpoints that made us feel like locals. It’s a slower-paced day but filled with hidden gems and photo-worthy locations.

  • Visit the Galata Tower for city views
  • Explore the Spice Bazaar (Misir Carsisi)
  • Treat yourself to a traditional Turkish Hammam.

Day 4: Travel Day to Cappadocia (Morning Flight)

Time to switch gears — today you’ll fly to one of the most surreal places on Earth, Cappadocia. We recommend booking a morning flight from Istanbul (IST or SAW) to Kayseri or Nevşehir for the best use of your day. Once you arrive and check in, take some time to wander Göreme or settle into a rooftop terrace for a magical sunset.

Honestly, Cappadocia feels like another planet — the cave landscapes, fairy chimneys, and quiet beauty of the region really blew us away; and till this day is one of the most unique places we have visited.

Things To Do:

  • Arrive in Göreme and enjoy a stroll through town or chill at a rooftop cafe and enjoy some Turkish tea or coffee
  • Go to Uchisar Castle for golden hour views
  • Try the Testi Kebab plate at Sakli Konak— a traditional stew made in a clay pot

Day 5: Hot Air Balloon Morning (or Watch Them!) + Day Tour

If you’ve dreamed of seeing the iconic hot air balloons of Cappadocia — this is the day! Whether you’re floating in one or watching them rise from your hotel terrace at sunrise, it’s an unforgettable experience.

Note: We stayed in Capiedra Hotel, a simple boutique hotel with one of the best hosts we’ve had while traveling the world.

Afterward, you can do an ATV tour to explore the hidden and stunning valleys from below. This was easily our favorite day — one that made us feel like kids again.

Our favorite activity was taking a taxi tour to watch the hot air balloons over Göreme from different viewpoints.

Day 6: More Cappadocia Magic

Today’s about diving deeper into Cappadocia’s wonders and doing everything else you may have on your list. We enjoyed having additional time to walk Göreme, stop by the Open Air Museum, and explore other restaurants in the area.

Note: You can explore on your own or book a guided day tour — either way, this day is packed with adventure.

Things To Do:

  • Visit traditional carpet making shop— Galerie Ikman for magical photos.
  • Enjoy Manti or Gozleme for lunch
  • Join a city tour, either Red Tour (northern Cappadocia) or Green Tour (southern sites)

Day 7: Return to Istanbul + Departure (or fly out from Cappadocia)

Time to wrap things up. Depending on your flight, you’ll either return to Istanbul or fly out from Cappadocia. Most international flights will connect through Istanbul anyway, so use your layover (or final hours) to revisit a favorite café or squeeze in that one thing you missed from the first half of the trip.

If your flight out of Cappadocia is later in the day, you can take it slow and enjoy one more Turkish breakfast or a last stroll through Göreme.

Tip: Flights are the fastest and most convenient. On a budget? take an overnight bus.
